Actually i figured it out, i wasn't going deep enough in the settings.

With the new HTC Messaging client v1.8 go to
All Messages >> Menu >> Settings >> Options >> Menu >> Signature

and edit from there. I never realized there was another 'Menu' after going under the settings options with further settings u can update
