How do i back up my weather, stocks and contacts? Thanks

I'm not sure where weather and stocks are stored, but there are a few ways to backup contacts using Sashimi. You can manually copy pim.vol from root of your device to the root folder in Sashimi so that it will paste it back when you run Sashimi. Or you could just use the build in PIM backup feature under the tools section of Sashimi.

EDIT: I missed the obvious other answer. You can always use an exchange server to keep contacts up to date at all times. Google is great for this.
