How do I uninstall Vito FunContact and revert back to the default contact list?

was it built into a ROM? if so you may not be able to get it off.
you could try installing a differnt/better one and link it to the proper buttons.

on second thought just reflash to a newer ROM

No it was not part of the stock sprint rom. I bought SMSchat from Vito and downloaded a Vito FunContact to try out...
