Search the market for "ShootMe". Shake the screen and it saves a screenshoot in the ShootMe folder on your storage card.

others have noted shootme, but they forgot to mention that you need to have root access to use it.... it no longer works on stock EVOs if you installed the recent OTA update.

Well I still have stock and I see no reason whatsoever to root to be honest. I know fo the possibilites after rooting, but they're not enough to get me to root, sorry.

So anyone know of a way to capture your screen with stock ROM?

All the applications I know of require root access (if you have taken the last OTA update).

The only other way is to be connected to a PC with the Android SDK installed:
