I am new to flashing just got my HTC Touch Pro sat what i need is it the kitchen or the rom or both??

You'll only need the kitchen if you're cooking your own ROM. You just need your ROM of choice if you're going to flash. A warning I give to noobs is to make sure you've read all you can about your device and WinMo in general before you attempt a flash. If you don't follow the instructions perfectly or are not comfortable with the process, you can, and likely will, brick your device. This magically turns a usefull PPC into a paperweight.

I flashed pre-made ROMs awhile before I even attempted to cook my own.

It's a process. Crawl before you walk!
