also what would you like to have removed?

Well... I thought the enlarged start menu was the reason why the soft menu's were larger than normal too, but it appears that isn't the case. As when I didn't include it in the kitchen they were small, but when I did they became large...

As far as what I'd like to remove was just basic stuff like PIM Backup, Mp3 Trimmer, Audio booster, just for me personally, but it wasn't a big deal, the enlarged start menu was my big problem with it. I can def. live with these programs though.

the soft menus is actually a reg setting and font change to make them smaller.

large star menus does effect these i think.

Out of curiosity is installing themes, or sprint neon icons on top of the juicy rom supposed to slow it down or eat up additional processes?

I didn't notice it being any slower. Still feels nice and quick.

I see, any idea where this reg setting is? (I'm diving through it now look too)

Edit: Found this:
32. Change system and context menu font size:
HKEY_LOCAL_MACHINE\system\gwe\menu\popfnt
and change the value for the "Ht" entry to "1000" decimal (from 1200)

but it was already set at 1000... just changed it to 800... it's booting now... that was it. 800 seems just about perfect!

In any custom ROM, such as Juicy's rom built off the base kitchen, these files will reside in ROM, therefore, will not take up any storage space.

Also, as mentioned by Juggalo X, you do not need to install or run TF3d Config program, you just need to download NisseDilligaf's original sprint theme and it will write over the HTC Black theme Juicy used. That's what I did myself because I missed the neon "eye candy" that the sprint theme had. :)

Not completely true, there are a few extra programs that have been added in that aren't essential (but still nice). Both the GF/TC ROM and Juicy ROM are pretty clean though.

I've got TomTom, and half a dozen games installed and I still have 60mb of Storage memory left. (on a kitchen based rom with everything except one-note checked)
