Launcher Pro is great. It's not really an alternative launcher like I'd thought before I tried it, which had put me off on trying it. Instead, it's an enhancement for the built-in launcher. It runs faster than stock, and has more options. It's great, no downsides.

Edit: A revise my previous recommendation. ADW Launcher is even better. It's free as in open source, and lets you do a lot of things you need to pay for on Launcher Pro. I like it even better.

Pandora works fine, just no 3.5mm jack yet. Hope that comes soon!

To add to the list:

Gistrings (Guitar tuner) mic doesn't work for it though

3.5mm jack is the only thing making me reboot to WM.

DoubleTwist - for locally stored music
OrbLive - for Orb (can't get from marketplace currently, but the apk's easy to find.)
Smooth Calendar - fits nicely under Beautiful widget for a quick view of upcoming appts and I've found it's easy to tweak the look so that it + Beautiful widget creates a very Sense-looking main page.

The 2 apps I can't live without are:

Titanium Backup
Tapatalk Pro - non-XDA version gives you access to just about ANY forum: ppcgeeks, xda, and others I can't mention here lol.
