Kitchen Question

I was looking into getting a cheap pc to do some cooking, but I don't want to use it for anything else. I have my macs for everything else. So- what is the minimum system reqs for ppc kitchen? And just incase someone asks my mac is too old to run windows on it.

Anything that can run XP would do...

XP SP3
Outlook 2003
ActiveSync 4.x
AVAST (Anti-Virus)
NotePad++ (Editor)

P2 Class Processor
256 Meg RAM (RAM is cheap, go for 512 if possible)
40 Gig HD
USB 2 (Can be add-on card)
NIC
SVGA (800x600 min., 1024x768 would be better)
SD Reader (Nice to have)
You could probably pick up an old Notebook PC for around $200 like this...
