is there a way to manipulate the "favorites" menu in the phone app?

Long pressing your contacts in your phonebook gives you the option to add to favorites. Long pressing favorites gives you the option to remove from favorites. As for the frequently called, they are just going to be there at the bottom.

Open the contact. Then touching the star in the upper right hand corner of each contact will set it as a favorite and turn it gold. touch it again will remove it & turn it gray again.
