Hex Editing a Manila File

I'm trying to use XVI32 hex editor to change the text that appears in a manila file.

i was directed to find the value, and change it to what i wanted it to be (which sounds easy enough) and so i'm trying to find the "string" but it keeps saying "string not found" so it looks like i'm in waaay over my head here...

haha not even sure if i'm using the right terminology but any dumbed down help would be appreciated
