Can I only edit the included projects/kitchens, or any rom I load?
Can I include my own programs? I'm assuming if I copy them to the "tools" folder they will be installed when the RUU is created?

To add a program to a ROM you need to have the OEM of the program. Spunks3 has a thread going right now in the Upgrades Sub-Forum (where all threads about ROMs should go, btw) called "OEM Packages" Here's a link: http://forum.ppcgeeks.com/showthread.php?t=19155

If you go to the ppckitchem program file on your computer you can add and remove options.

Correct, but I believe he is talking about adding programs not already included in the kitchen. Or maybe I'm wrong?

Absolutely correct, I want to throw my programs in one ROM through Build OS to save time from installing programs after flashing...
