Can't get e-mail working

I have been trying to get my e-mail working, but my server has a "/" in it, so when I put my server name in, it drops the "/exchange" at the end, showing only the part before that.

What can I do to get my full server name to stay in the phone when I set it up?

Are you trying to set up regular email or an exchange email? They are different setup procedures.

it is Outlook through a POP3

Your first posting said something about "exchange". That is not POP email.

the server address is: http://mail.xxxxxx.com/exchange

with the x's being replaced by the actual information. When entered into the server box, it drops the "/exchange" off the end, resulting in my e-mail not synching

That's a strange way to set up a mail server. You shouldn't need a folder in the address. Does it not work without it?

try putting in just the domain, and leave off the mail subdomain also. For example: XXXXXXXX.com

Also, no protocol either, so leave off the http://

I have tried it without the folder at the end or the http at the beginning, but still nothing.

The route you're going is the setup for OWA or Outlook Web Access (via browser). If you're going to use Exchange sync or POP you will only need to specify a server - not a full URL like you're trying to do.
