Hopefully this is my last dumb one...I'm just trying to figure out if I'm running 6.1 or 6.5

or...if you soft reset your phone and you still have the stock splash screen, the green windows mobile screen will say 6.1....not sure if 6.5 is the same (yeah yeah...i still haven't upgraded).

That will work too. I got a Verizon refurb last Tuesday that shipped with WM 6.5 and it had the orange "6.5" splash screen
