Gmail Sent Messages
When I send someone an email from my Gmail account, my phone also receives a copy of the sent message. Is there a way to disable this?

unfortunately not. its because of the conversation/ threaded feature gmail employs.

how does the que work? if you send email to someone via gmail, and you receive the notifacation.. when you delete the notifacation, will the recipient receive the message? i just sent out a resume, it showed up in my sent folder, received the notifacation, got a call from the place asking me if id sent out my resume.. i said yeah and checked my sent folder and it was gone... looks kind of dumb on my part cause its for an IT job, but im not all that familiar with mail servers...

Yes it still sent... you are receiving your backup copy that is saved to keep both side of the "threaded" email that gmail uses... If you click sent, then its sent, when you get it your just getting a copy... and if you have the 6800 set to delete messages on mail server then when you delete your COPY then its gone from your gmail also...
