.. I have Asurion protection so I know I can get it replaced, but what happens if I find the old one after I get the replacement?

This has happened to me.....

Just get your replacement and use the old one for a spare batt or for testing out custom roms. I was told that the ESN on the old phone will be flagged and cannot be used, that's what they told me anyways. So I use the TP I lost and then found as a custom rom guinnea pig....
