how did he change it to 200 when the screen is off? it wont let me enter numbers just choose from a list of like 8 different ones.

Use www.unrevoked.com method. To "unroot" with this method all you do is uninstall and reboot phone.

i was a little scared at first too, but i quickly got over it, sorta like the first time you run a hard SPL on WinMo i guess lol. if you go the unrevoked way about it, it's very very easy and painless, just installing an .apk file and that's it. and if this turns out to work as it should, i don't see how anybody could resist!
