with their original root, you couldn't uninstall stock apps from within android...you'd have to go into recovery

is this the same way?

Question about unlocking. I know with windows mobile if you ever had to take your phone to a sprint store for repair you would have to relock your phone. Is it the same way with android on the evo4g and is there a way to relock after unlocking?

You can just run the sprint ruu and it would unroot.
