it is possible that some of the information will not transfer to the new ROM.
Email setting, favorites, etc, that will/should work no problem.

I don't recall if it offers a limited # of backups or certain time period (i.e 15 days). As for your question about restoring after a ROM flash, one of the features supplied is the ROM Upgrade mode. This will allow you to completely restore your device, with the exception of those settings unique to your old ROM

You can do it and you can tell it what you do and dont want to reinstall. As long as its not something that is hard written in to the OS.
