Ok help out the non exchange user..why is 2007 any better than 2003?

Omni - for the average user, basically you won't notice much of a difference. The big deal right now is that with WM6 and Exchange 2007 you can receive html email with poutlook. With 2003 you can't - it just gets converted to text.

It does work (html) with pop/imap, however, that doesn't have activesync/push...

Believe me, I considered changing over to Sherweb - which offers a fantastic deal of 9.95/month for virtually unlimited storage and includes a sharepoint services account. But Sherweb (and the other "good deals" out there) have no track record. As a business user, I'm not really that price sensitive - I won't quibble over $5/month price difference as long as I'm getting the best service available. Mail2web has been the consensus best service (at least for the last year) and I've been willing to stick with them as long as they made the migration easy. Today they told me they still don't have a migration plan for existing business users but that I could always cancel the account and sign up as a new user. I may end up doing that.

Omni,
HTML is not just email with pictures - it's nice to be able to maintain consistent html fonts, indenting, etc. through an email conversation. Without it, one entry from my phone converts the whole thread to ugly ANSI text.
Still, the bigger bennies (for me) of the WM6/Exchange2007 combo are the message flag synchronization and the server-side search functions - neither of which I've been able to try yet.
