Maybe if you can put your device in disk drive mode you can hook it to a PC and retrieve your data that way. Also, you could try using EveryWAN or MyMobiler to access your device data and Apps from your PC through USB. Either way, you shouldn't use much if any processor power on your device to access your data just your PC's hardware. I don't know of any process explorer other than the standard Task Manager type apps like SKTools or MemMaid that allow you to halt or kill processes but not kill child processes within main processes.
