The stock rom doesnt have Sense UI, it actually has TouchFlo3D...I forget which version though.
As for roms I would go with Malrom wm6.5.3 with Sense UI 2.1. Although alot of people might recommend Mighty Rom. Best way to find a good rom is to flash different ones and try them all out.
