Try this registry change, I found it here this morning while searching for reg hacks to include in my ROM. I noted the same grainy gold picture quality on my XV6800 before applying this and it made quite a difference.
HKLM\Software\HTC\Camera\P2\MainCamSupportCaptSize
Default value is 10 decimal (0xA hex). Change value to 58 decimal (0x3A hex).
