But the sound files are merely wav files. So you could extract the cab on a computer, replace the wav files (there are two for each sound and in and out sound) and edit the registry to set the names. Then cab it back up and install.

Just rename the wav files to the same names as in the cab (xwav I believe) copy and your good to go.
Your are correct you can't easyly customize your own sounds, I pulled the Sliding Sounds app from a HTC Fuze.

And yes if you have a cab editor, you can add sounds or replace sounds.
Actually by default it only had 4 open/close sound sets. I did add a few my self when I put it together.
